The chef, Christophe Bassard, has made this approach his signature. The kitchen’s only role is to bring out the best of the flavour of top quality produce, whether to enhance the tone of a fish, to temper acidity or on the contrary to spice up a texture.
Together with his team of 10, the chef seeks to treat restaurant guests with a classic cuisine that brings the best of the season to the plate and gives pride of place to local produce.
